Perfect Scrambled Eggs in 3 Minutes

For the past few weeks, I have battled an infection in my body. My doctors have given me high doses of antibiotics for it. But the antibiotics kill all kinds of bacteria so I have been advised to eat a lot of yogurt and even take a probiotic supplement.

To further help my body to heal itself, my doctor also suggested a high protein (low carbohydrate) diet. That means that my doctor has demanded that I eat lots of cold cuts and red meat – he is SO mean :-).

But one of the best sources of protein is the common egg! If you still consider eggs to be bad for you, then you need to read WebMD’s article on eggs. Who knew that a single egg has only “75 calories but 7 grams of high-quality protein, 5 grams of fat, and 1.6 grams of saturated fat, along with iron, vitamins, minerals, and carotenoids.”

Well, the mean old doctor did it again! Now I have to eat a couple of these guys for breakfast, just so I can get 15 grams of protein!!

Fluffy and light: For the perfect scrambled eggs in 3 minutes, try this: 

In a microwave safe bowl add two eggs, 1 tablespoon milk, a bit of salt, and optionally, a half a slice of American cheese.

Place the bowl in the microwave, set the power to 50 percent. Cook for 3 minutes. Stir after 2 minutes. Nuke for one more minute (total = 3), remove, stir again and enjoy.Perfect Scrambled Eggs

My settings are for a 1200 watt device. You may need to make adjustments to the time. If your microwave is a 900 watt model, change the power to 70 percent and adjust the time so the eggs are cooked to your liking.

So, I wonder how long I can hold on, trying to stay on this “awful” diet!  It is tough but I have to follow doctor’s orders! <<<big grin>>>
